Roasted Vegetables
There are many ways to prepare soft squashes. Many times the simplest recipes are the best. This recipe is no exception. It is based on a recipe from Instagram's cheftimclowers page. Check him out for lots more cooking ideas.
INGREDIENTS
Rough chop the following vegetables:
2 J.R. Zucchini
2 Spring Onion
2 Bell Pepper
2 Tomatoes
3 Crookneck Squash
INSTRUCTIONS
Season with Garlic & Black Pepper - start with 1 1/2 Tsp and add if you need more seasoning
Coat with 2 Tbsp. Extra Virgin Olive Oil
Stir well to incorporate seasonings and oil.
Roast at 350 for 35-40 minutes stirring half way.
Remove from oven and re-season as necessary and now it’s time to add salt. 1 1/2 Tsp sea salt.
Serve and enjoy!
